But you should know.

If you came to the house of any BookSumo employee the first thing they would show you is there spice collection.

If you are a real cook your cabinet should be filled with spices.

In fact, your largest cabinet should honestly be only spices.

Because you know.

Spice is the key to good cooking.

So what is the point of this post, you may be asking?

Well point is…..

We want to share with you a secret spice mix, that we love using to transform roasted veggies and baked meats like chicken.

It really isn’t a secret, because everyone who is fortunate enough to live in the southern French Riviera, knows this spice mix, because that where it originated.

Imagine the beautiful coast of France, and nice warm weather.

Think of the villas sitting on hills, and feel the breeze.

Now that you are in the proper state of mind.

Here is our not-so-secret spice mix that you will love to use occasionally.

If you know a little bit about spice mixes you might know the one we are going to tell you.

It’s called Herbes de Provence.

“Herbes” is pronounced like Herbs, because e’s at the end of French words are silent.

And “de” is pronounced like “duuuh”.

Finally “Provence” is pronounced like “pro”-“voh-nce”.

So now that we are pronouncing it correctly.

Here’s how to make it.

You’ll need the following things:

  1. 2 tbsps dried rosemary
  2. 1 tbsp fennel seed
  3. 2 tbsps dried savory
  4. 2 tbsps dried thyme
  5. 2 tbsps dried basil
  6. 2 tbsps dried marjoram
  7. 2 tbsps dried lavender flowers
  8. 2 tbsps dried Italian parsley
  9. 1 tbsp dried oregano
  10. 1 tbsp dried tarragon
  11. 1 tsp bay powder

Pour everything into a mortar and pestle and crush it up.

Put the spice mix in a jar, and use it as a seasoning for chicken before you bake it, or as a topping for roasted veggies or as a really cool gift for someone.

The resulting dish will have a unique taste that is characteristic of the Rivera.

Of course this only 1 of our kinda secret spice mixes.
